1 lb cooked chicken breast chopped
1 small apple diced
2/3 cup of grape halves
1/3 cup dried cranberries
1/4 cup chopped walnuts
2/3 cup plain Greek Yogurt
2 tbsp lemon juice
1/2 tsp garlic powder
3 tbsp fresh dill chopped
(If you want more tang, add a little squeeze of mustard)
For the chicken you can either buy rotisserie chicken or cook if yourself. If you cook it, season with salt, pepper and garlic powder before cooking either in the oven, on the grill or in a pan on the stove. Cook you chicken breasts until they reach an internal temperature of 165 degrees.
Mix all of the ingredients together in a bowl and season with salt and pepper to taste.
Serve on a roll, in a lettuce cup or on a plate.
